Goodbye Abilene.

Alright... time to try to make a great excuse for being MIA.

We're moving back to Lubbock. 

NEXT week. 

So I've been trying to get my ducks in a row. 

Cleaning out my classroom. :( 

Spending most of my free time searching for jobs.

Taking tests to try to add more certifications so I'll be more competitive in the teaching field. If that even counts for anything with things the way they are this year.

Starting lots and lots of crafts for the new place and not finishing them.

Trying to spend as much time with my parents & grandparents as possible before the move because they're heartbroken over it.

Cleaning to no avail.

Swimming/spending a little time outside in an attempt to keep my tan (great top priority, I know).

Spending some much needed time with my BFF as often as we can before we go back to living 6 hours away from each other.

{Last night we found out that she's having a little GIRL!!}

Making little day trips before I live in the middle of no where again and day trips are out of the question.

No time for pinning on Pinterest.

No time to read my bookmarked blogs (yep, I'm over 250 behind now).

No time for catching up on Tivo'd shows that I've been saving up since January because I thought I would need them in the summer (except The Bachelorette. DEFINITELY can't get behind on that one).

Oh yeah... and NOT starting to pack.

But, it's all going to be so worth it. I've missed Lubbock so so much. 

And I'll live within a mile of my sister! 

And I will actually have decent stores to shop at! 

And I can go to Tech football games again! 

And eat at Fuzzy's whenever I want!

And I'll stop there. Because I have too many other things to do (see top).

I took a SUPER hard exam today, among a thousandddd other things. 
But I'll blog again... when my brain recuperates from the mush that it has become over the past ten days of excessive studying.

Who has time for blogs in the summer?

It's been over 100 degrees every day for at LEAST two weeks straight. How is that even legal? 

Our poor garage sale customers were absolute troopers last Saturday. Heat doesn't keep people away from garage sales.

And people actually bought my old junk! Nearly everything was gone by the end so the hard work was totally worth it. Minus the utter exhaustion that I felt afterward. I've been occupying myself with water-related activities as much as possible ever since. 

Unfortunately, Jake has been enjoying water-related activities as well.

This dog must hold the record for the most baths given per week. (Let it be known that I don't even like dogs very much because I hate the way they smell and how they slobber all over everything. I'm determined to like my own dog, so I have to bathe him every .5 seconds so he'll stay clean and smelling fresh.)

Minus a short stint in Fort Worth earlier in the week, my pool time has been suffering a little bit because I'm having to study for yet ANOTHER exam.

I wish I could time travel back to 2008 and warn my poor post-college graduate self that I would, in fact, have MANY more exams in my future and to calm down with the excitement.

Luckily I will reunite with water asap because I'm meeting Sarah at Hurrican Harbor on Saturday for a full day of floating the lazy river!! Oh my gosh, I cannot.even.wait.

I go to United at least 3 times a week. If I don't win something during the Million Dollar Summer giveaway, something is wrong with their system. I keep extremely intricate lists of the things that I need, yet somehow I never seem to get everything I need to last the entire week.

Sometimes I drive all the way across town just so I can go to the United that has mini carts.

I tried to take a picture but it ended up looking like a regular cart. For once people aren't staring at me as I struggle to push a cart while looking like a total lunatic. It's like these mini carts were created just for me. Looovvvve them.

...Can you tell that I'm watching The Bachelorette while writing this? I had great intentions for this post but ended up writing about a grocery cart. 

I blame summer. Maybe next time.

Flavors of the Week

It's funny to me that a couple of weeks ago I was worried that I was going to be bored this summer. I've been running around like a crazy person the entire time! I usually don't sit down to relax until well after nine (but at least bed time is a little later now, too). In fact, I've been so busy that I keep wondering how in the world I ever get anything done when I actually have to go to work for 40 hours of my week haha. I could absolutely get used to this!

This week I've been trying to get ready for a garage sale that Mom & I are putting together this Saturday. I haven't even started pricing any of my stuff yet.

Looks like I'm going to be scrambling to get it all done in one day. It blows my mind that I could have accumulated so much junk since the last garage sale a year and a half ago. I didn't even show you the clothes pile because it was way too embarrassing.

I'm sure I'll just be rolling in the dough after all of this is said and done.

I had to take one last picture of me actually holding Jake. I can't even BELIEVE how much he's grown over the past 6 weeks. It's un-freakin-real. From now on I'll have to take pictures at his level because I nearly threw out my back (is that what old people call it) while I was trying to take this one.

I wanted to show you a video of the bumblebee dance from last weekend but it turned out that no videos were allowed. Sad day. It was definitely a lot of fun though and I had several people tell me that we were their favorite dance. That's about all I can ask for!!

Bowtie Festival Copycat Recipe

I lovvvvvvve any dish that includes alfredo sauce. It can be a cheap frozen dish from the grocery store for all I care. My favorite meal to make at home is chicken alfredo. Problem is, my recipe has the most fickle alfredo recipe in the entire world. I've been making it regularly for a good 5 years now and I still screw it up big time sometimes.

Sooooooo I decided to share my 2nd fave alfredo recipe with you instead... a copycat recipe of the Bowtie Festival from Johnny Carino's. I found the original recipe here and adapted it to my liking. It's yummy and very heart-attack worthy.

You'll need:

10 oz farfalle (bow tie) pasta
4 slices cooked bacon, diced
1 tbsp butter
1 tsp chopped garlic
2 tbsp diced red onion 
1/4 cup diced Roma tomatoes
1 cooked chicken breast, thinly sliced (as a time-saver I sometimes substitute Tyson Grilled & Ready Chicken Breast Strips)
1 pinch ground black pepper
1 pinch garlic salt
1 pinch salt
2-3 c alfredo sauce

I usually make my own quick alfredo sauce. For that you'll need:

1 pt heavy cream
1 tsp pepper
2 tbsp milk
2 c shredded parmesan cheese

The funny thing about this recipe is that the original recipe said prep time is only 20 minutes. Tonight it took me around an hour and a half. I'm not saying that it can't be done in 20 minutes. I'm about 75% slower than the average person when it comes to a LOT of things. Too detail-oriented.

It's no wonder that I really hate cooking. Luckily I love food, so I'll probably keep doing it.

Anyway, 20 minutes or an hour and 30 minutes, this dish is totally worth it I promise.

I usually start with the alfredo sauce (you can prep it ahead of time & store it in the fridge):

Boil 1 pint heavy cream, 1 tsp pepper, and 2 tbsp milk.

Remove from heat & add 2 cups (or 3 or 4 :) freshly shredded parmesan cheese. Stir until it melts.

Done. Easy peasy.

Now for the pasta:

Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Stir in the bow tie pasta & return to a boil. Cook, uncovered, stirring occasionally until the texture of the pasta is to your liking. Drain. Return to pot and mix in a little olive oil.

Meanwhile, cook the bacon in a skillet over medium heat until nearly crisp, about 5 minutes.

Remove the bacon and wipe out the skillet with a paper towel.

While the bacon cools, chop up your veggies...

And thinly slice your chicken...

Now you can chop up your bacon.

Melt 1 tbsp butter in the same skillet over medium heat. Return the bacon to the skillet, and stir in the red onion (I'm picky so I leave this out), chopped garlic, Roma tomatoes (anddd I leave these out too), thinly sliced chicken, black pepper, garlic salt, and salt.

Cook and stir until the bacon is crisp and the onions are translucent.

Almost there!

Stir in the alfredo sauce.

...Pour over the cooked pasta and enjoy!!

The Real Slim Shady

I spent this lovely summer day watching Real Housewives (don't judge) and working on my bee hat. What do you think? I feel like it makes me look like a rapper. Straight up Eminem style. Word to yo motha. 

Add my beeautiful (genius!) costume to this and I'm going to look like 250 pounds of pure hottness. You'll see.

I spent the afternoon at the pool today! I've been waiting for this day for months and months. Laying out in the backyard with the sprinkler propped up on my lounge chair barely running just doesn't quite have the same effect.

Then I topped the afternoon off with a delicious mini blizzard because I figured I deserved it after baking at 102 degrees for two and a half hours. I would love to speak with the person who invented the mini blizzard by the way. One smart cookie.

Having a summer break is the BEST.

I also discovered that there's a major downside to pledging to stop using tanning beds... no base tan. Apparently my "tannish" looking skin that I have acquired from my Jergen's Natural Glow lotion isn't quite cutting it. I thought I was going to be completely sunburn-free when I rolled out of the pool without having avoided putting on sunscreen. After all, I'm immune to sunburns.


Sunburn central. I took a picture when I got home because I wanted to document how hardcore I am. 

Looking back on the picture, it looks like a pretty weak burn (and a totally rockin' tan). 

Which is why I re-took it tonight after it had a few hours to fully develop. I can't have myself looking like a wuss.

No you're not hardcore! (No you're not hardcore!) Unless you live hardcore!

Peanutttt, Peanut Butter (and Jelly!)

I've found myself in a summertime food rut. Nothing sounds even remotely appetizing to me unless it's considered a "cold" food. Problem is... cold foods are few and far between if you think about it. Sandwiches and salads come to mind but it basically stops there. Unfortunately I don't like sandwiches OR salads. 

So when I'm at home I've been eating PB&J's. For like every meal.

You would be surprised at the variations that you can make to a PB&J. Grape jelly. Strawberry jelly. Crust. No crust. No time? Grab an Uncrustable from the freezer.

Lovvvvve PB&J's.

Don't worry, I have a few go-to side items that I mix-and-match with my PB&J meals.

{Bananas - Grapes - Mac 'n cheese - Yogurt - V8 (because it's the only way I'll consume veggies) - Hard-boiled Egg - CoJack Cheese - Cashews - FaveReds - Rice Krispy Treats}

Don't I live an adventurous lifestyle?

Wordless Wednesday

My weird little dog loves to swing. Luckily he doesn't realize that he's starting to get huge and awkward looking. Nor does he realize that his days of swinging with me are becoming more and more limited.

I had more pictures and a lot more to say but then my instagram app crashed like 15 times in a row and completely took the sunshine out of my life for the time-being. Whomp-wah.
